A Bite of Venice’s Heart: Golden Mozzarella and the Spirit of Cicchetti

 


A culinary tradition as old as the Rialto itself thrives in Venice, a city woven with the stories of merchants and mariners, where every calle hums with tales of commerce and camaraderie. These tasty morsels came from the lively quarters where Venetian traders, their souls as full as the gold they sold, would come for a rest. The happy nibbles that go well with the modest *ombra*, a tiny glass of wine, are called "cicchetti." Deal-makers and dreamers have been fed by these modest but beautiful treats since the 13th century. These small dishes are perfect for sharing under the warm Venetian sun or in the soft glow of lantern-lit *bacari*. The fried mozzarella sandwiches, or *mozzarella in carrozza*, were my favorite among these treats. Enveloped in a crisp golden crust, these treasures resemble Portia's golden bounty. Each slice of mozzarella is delicately embraced between two pieces of bread, dipped in flour, egg, and breadcrumbs, and then fried to a color as lavish as the Doge's robe.

The crisp shell crackles like the song of a Venetian gondolier sailing over a moonlit canal, releasing a cheerful melody with each bite. A soft and decadent contrast that melts on the tongue like a sweet symphony is provided by the molten core of creamy, stretchy mozzarella that sits beneath this protective armor.

It is a moment to savor amidst the colorful masquerade of Venetian life, a harmonious fusion of texture and flavor befitting the great Bassanio himself.
